Galveston’s Champion Pastry Chef to Open Milk & Honey Baking Company
For years, Galveston residents and visitors have delighted in the sweet creations of Bethany Boedicker, who honed her craft as a pastry chef at Moody Gardens. Now, the world champion baker is preparing to bring her talents to her own storefront, Milk & Honey Baking Company, set to open early next year.

Bethany’s journey to this milestone has been anything but ordinary. From whipping up thousands of desserts during the bustling Holiday in the Gardens events to earning global recognition at the World Food Championships, she’s no stranger to hard work or high-stakes environments.
Moody Gardens Pastry Chef: A Decade of Dedication

Bethany will leave her position at Moody Gardens to focus on opening Milk & Honey Baking Company, her long-anticipated bakery in Galveston. The shop will feature an array of fresh-baked treats, including cookies, cakes, cupcakes, macarons, and even artisan breads as she expands her offerings.
With her keen eye for detail and a commitment to quality, Bethany plans to use her years of experience to ensure every dessert is fresh and flavorful. For her, anything less is unacceptable. “A stale cookie just ruins the experience,” she says.
A Path Rooted in Resilience
Bethany’s path to Galveston began in 2010 when she and her husband, Brandon, moved from Lima, Ohio, with their three young sons. Seeking a fresh start, the family relied on grit and determination to build their new life. Bethany juggled culinary school at the Art Institute of Houston with shifts at Landry’s, while Brandon transitioned into the HVAC industry.
After graduating, Bethany sharpened her skills working at PattyCakes before joining Moody Gardens. There, she not only mastered classic desserts like crème brûlée and four-layer chocolate cakes but also gained valuable experience managing a kitchen under tight deadlines—skills that will undoubtedly serve her well as a business owner.
